Kir and Lloyd invited us to join their friends (Ed and Katie from Portland) for a trip to the world famous Louis Mueller’s BBQ in Taylor. About 35 miles outside of town, this joint gets about 80% of it’s business from “the big city”.
The walls are black from smoking the meat in house every day for six hours. Business cards. Signs. Pictures. All black. Even the bathroom had some funky smoke drippings on the wall (see below).
The brisket is the best I’ve ever had. It’s served dry (sauce on the side) and the only rub they use is salt and pepper. This guy really liked it, too. So did James Beard.

The restroom in the new section next door had 30-foot ceilings and some weird dripping pattern (I assume from the smoking).
